Daisy Cake!

After all this talk about running and walking, the only left to do is… bake a cake!  Actually, I made this cake over the weekend for Sunday dinner, a small birthday celebration for Seth with my parents at their home.  Since it was just going to be four of us (plus the pups), I thought it would be fun to use the daisy-cake pan I bought at Williams-Sonoma ages ago.  To say that I don’t bake much would be an understatement; the only reason I even own a cake pan is because daisies are my favorite flowers and, when I saw the pan in the store, I couldn’t resist.  I’ve only used it once before, right after the purchase.  So it seemed like a good time to dust it off and try a new dairy-free alternative.

I picked up a box of Cherrybrook Kitchen yellow cake mix at The Whole Foods Market.  Cherrybrook Kitchen calls itself “the sweet solution for food allergies” — not only are the products dairy-free, but they’re also peanut-free, which I know is good news for a lot of you out there.  And even better news is that this cake mix is super-easy: all you need is 1/3 cup of melted margarine, 3/4 cup of water,a nd the cake mix. For margarine, I used one of the Earth Butter buttery-spread sticks that I keep handy in the freezer just for special occasions.

So 25 minutes later, the cake was golden and my home was smelling heavenly.  After letting the cake cool for about 10 minutes, with one good flip of the pan… voila!  To finish, I  just gave the cake a light sprinkling of powdered sugar once we got to my parents’ house.  Next time, I’m going to use the yellow cake mix to make cupcakes, and then top them off with Cherrybrook’s vanilla frosting.

Other Cherrybrook Kitchen products to try: Gluten-Free/Wheat-Free mixes include cake, cookies, and pancakes.  They also have Gluten-Free Mini Cookies in Chocolate Chip and Vanilla Graham that also are dairy-free.  What a great snack idea for kids!
