Girl Scout Camp Banana Boats
Once upon a time, this city girl went camping. I was in the fourth grade, a “junior” scout, and the whole troop went to Camp Glen Spey in New York for the weekend. Among the many good memories of that trip, I remember one night by the campfire, all of us singing and making these banana boats. Until last week, it was the only time I’d ever had them. But then came the sudden inspiration: after all these years, it occurred to me that I already had in my kitchen everything I needed to improvise on that old Girl Scout recipe. ingredients: (per banana boat)
- one medium, ripe banana
- 4 Dandies marshmallows (each cut in half)
- about a tablespoon of Sunspire vegan carob chips
- small sheet of aluminum foil
*Dandies and Sunspire chips are available at Whole Foods
directions:

Inside the banana, tuck the marshmallows and vegan carob chips along each side. Sprinkle the remaining carob chips along the top of the exposed banana and then replace the flap.

Place on the stove, using tongs to move. Let the banana cook on the open flame for 3 minutes resting on one side, then 3 minutes on the other side. Note: It's going to smoke a little!

Remove wrapped up banana from flame and let cool for a few minutes. Unravel the aluminum foil and cut away flap with scissors.
How about S’Mores?
To make another Girl Scout classic — marshmallows and chocolate sandwiched between two graham crackers — here’s an idea: try using Dandies marshmallows and Sunspire’s vegan carob chips along with Grateful Grahams. Wrap ‘em up in foil and toast ‘em up!
